- 334g flour (2 cups)
- 13g sugar (2 tbsp)
- 3.7g baking powder (4 tsp)
- 3g salt (1/2 tsp)
- 495g milk (2 cups)
- 113.4g butter (1/2 cup)
- 3 eggs
- waffle iron
- small bowl
- small bowl for whipping egg whites
- medium/large bowl for batter
- electric whisk
Start the butter melting over low heat.
Add the flour, sugar, baking powder and salt to the large batter bowl. Whisk the dry ingredients together.
Add the milk and butter to the egg yolks. Whisk the wet ingredients together.
Make a hole in the middle of the dry ingredients with the spatula and add the wet egg yolk mixture in. Mix gently with the spatula, being careful not to over mix it. (It should be a little lumpy.)
Electrically whisk the egg whites on high until stiff peaks form.
Add the stiff egg whites into the batter. Fold gently with the spatula.
Add the batter to the waffle iron as per the waffle iron directions.
